The Pizza Steel took our baking to another level, and we are sure it will be the same for you!
Since we sold our first Pizza Steel in Denmark, May 2015, we have spent a lot of time testing various steel types and dimensions.
In doing so, we discovered (much to our own surprise) that thicker wasn't automatically better. If you want a baking steel that will be excellent in both pizza making and bread baking, the steel has to have the right dimensions. Too thin, and it won't store enough heat for the demanding initial stage when the dough hits the steel and absorbs heat from the steel. Too thick, and it will have a hard time recharging after the demanding initial phase of baking, since the top of the steel is covered with dough, it can only absorb new heat through the bottom of the steel. The thicker the steel, the harder the recharging.
So, after testing 2, 4, 6, 8, 10 and 12 mm steels extensively for several months, two winners emerged:
The 6 and 8 mm steels both delivered excellent results.
But, because the 6 mm steel reaches peak temperature faster, and because it weighs about 2 kg less than the 8 mm version (which makes it easier to handle in the kitchen), the 6 mm prototype came out as our overall test winner.

The unique pizza stone that survives a BBQ!
The Pizza Steel is form stable up to 700 °C and works perfectly with a gas fired BBQ since you will be able to manage the extreme heat by turning off the gas while the pizza is on the steel. When used on a coal-fired BBQ, it is best not to place the coal directly underneath the steel, or wait until the temperature is right, unless you prefer your pizzas charred :-).

The Pizza steel works well, as pizza and for bread making, making a nice even base of the dishes, nicely browned. the surface is rough, which works well, with the seasoning process with oil also very quick to do.

The pizza steel has completely changed my pizza and sourdough game. A big step up from the oven stone I had before.
Moreover, when I wrote them after I realized that my oven was too small for the rectangular peels, they replied right away and offered to send me the round peel!

I was considering it for quite some time. With time at hand, I went for it.
And wow was it worth it!
Went straight for a testrun with store bought dough and it was a massive improvement already.
Then a week later I went all in with homemade, rested pizza dough. And the result was astonishing! Real good pizza with nice crust and all. This steel is a true keeper and well worth it.

Will man richtige Pizza oder ein professionelles Brot backen dann kommt dann sind haushaltsüblichen Öfen limitiert. In der Regel stellt man fest, dass Pizzaböden tendenziell weich werden und das die Kruste beim Brot noch besser sein könnte. Wir haben an unserer Schule aus diesem Grund den Pizzasteel für Haushaltsbacköfen getestet und waren sehr positiv überrascht, wie toll der Stahl funktioniert. Die auf der Homepage gezeigten Videos entsprechen der Realität, die Pizzen sind knusprig und je nach Rezept teilweise besser als beim Italiener. Auch lassen sich mit Pizzasteel beim Backen von Brot sehr gute Ergebnisse erzielen. Aus unserer Sicht ist der Pizzasteel eine sehr gute Ergänzung für jeden Haushaltsbackofen.
